You would think that we would have our food life together, being in the food industry and what not. WRONG. There are many nights where we break down and have either cereal for dinner, quickly throw naan bread with cheese on it into the microwave, have leftovers from an event, or order out for our dinners. Guys. This adulthood thing is not easy. If someone looks like they have it together, believe me, they’re just trying to cover up areas where they don’t want you to see. That’s ok. We all do it.
It’s seriously crazy how simple make-ahead meals can be. I really need to practice this more! We have had such great meals the last week, all because of this super duper simple and fast chicken prep we did at the beginning of the week. It took us all of maybe 5 minutes to put it together, and another 20ish minutes to wait for it to cook. (Well, it would’ve been 20ish minutes. But we went for a hike, so it was really ready for us when we got home. But you get it.)
We’ve had multiple requests for ideas on batch meals- how to make the most of an ingredient. This time we’re doing chicken! We put together a video of how simple it is (and our weirdness) and we have video’s on deck of what to do with the prepped chicken. They’re all some of our favorite recipes! Probably some of our most asked for recipes when we make it for a gathering.
